Okey Dokey Artichokey

My mother-in-law insisted I have a pressure cooker because you simply cannot make a perfect artichoke without it.

And I didn't believe her.

But she bought me one anyway (a pressure cooker, not an artichoke) and I still didn't believe her.

So it sat (once again, the pressure cooker, not the artichoke) while I continued to try all recipes for artichokes. I boiled. I steamed. I baked.

And while they were delicious, it was always a guessing game as to whether or not they were cooked enough or too much or not at all.

Until I broke out the handy dandy scary as all get out pressure cooker.

Loaded them up with my two test artichokes, set it on the kinda dirty in the last picture stove and BACKED AWAY.

The backing away part is crucial because who knows whether or not that thing is going to explode?

BUT...16 minutes later we had perfectly cooked artichokes.
And it wasn't a fluke because since that time I have made more than I can count artichokes.

And served with a side of melty garlicky butter...OH MY.
The moral of the story is...if your mother in law buys you a pressure cooker, use it.

Immediately.

  1. I'm not sure my MIL knows what a pressure cooker is! :-p

    That does sound like a good way to do Artichokes. My thing with Artichokes though is sucking on the leaves quickly looses its charm. I would rather just pull off all the leaves then cook and eat the heart.

  2. Xerxes...I wonder if your MIL remembers the time our pressure cooker blew up...and I'm not kidding! I was just a wee one at the time...maybe 4 or 5.

  3. Hmmm...this reminds me that I haven't made artichoke chicken stew for quite awhile. Maybe I'll have to pull out that recipe since I only have one child at home to complain about being served something cooked with artichokes...

  4. I wouldn't want to be in the room when one of those things blew up; and I especially wouldn't want to have to lean up after it!
