Yes, I've been MIA.
First the swine flu hit. Then the fun of parenting a spirited child. Lastly, a husband out of town for a LONG time.
Basically, I've been grumpy. And weepy. And whiney.
All lovely qualities.
Or not.

This week was the last week of Esther and boy, will I miss her. If you ever get a chance to do this study, please do...you won't be sorry! It's tough being a woman...but glorious, too!
My girlfriend introduced me to yet another new lunch spot...we bellied up to the bar (my new favorite place to sit when I'm out) and shared a bunch of stuff from their fun menu.
My favorite (along with the edamame dumplings) was this cucumber lemonade....OH MY. Totally tasted fresh and light and made me feel like I was counteracting all the shamrock shakes I have been polluting my body with.
How many shamrock shakes you ask? Let me recap...husband out of town. Free spirited child. Swine flu.
The one down side to eating a really super healthy light and tasty lunch is that afterwards you feel....well, hungry.
I swear, we were one of a long line of cars that left the organic restaurant and drove to the next parking lot over to Sprinkles.
Or maybe we were the leader of all those cars, but I'll never tell.
And Sprinkles? Thank you for the best vanilla cupcakes ever. I love you.
On the way home I began moaning (again) about all the leaves in my backyard (again) and my husband being out of town (again) and 'blah blah blah, get over it Michele' when my neighbor told me she had just the tool I needed.
A leaf blower.
And honey? The weed blower blew more than just leaves. Sorry about that. Dirt is cheap though, right? And the pretty flowers? I'm sure they'll recover in another few days. Hope Hawaii is fun.
A friend shared this recipe with me after posting some yummy pictures of it on FB. I haven't made it yet, but maybe I will when the weather gets warmer.
ReplyDeleteCUCUMBER LEMONADE
1 cup water
1/2 cup white sugar
1 cucumber, sliced
6 lemons, juiced
Make a simple syrup by stirring the water and sugar together in a saucepan over med. heat. Heat until just about to boil and the sugar has dissolved. Place in refrigerator 30 minutes or until cool.
Place the cucumber slices in a blender or food processor, blend until mashed into a pulp. Pour the cucumber pulp into a fine mesh strainer placed over a bowl to catch the liquid; allow to sit until you have about 2/3 cup of liquid from the cucumber, about 15 minutes.
Stir the simple syrup, cucumber liquid, and lemon juice together in a pitcher. Serve cold. Makes about 4 servings over ice. You can garnish with cucumber slices (you'll need to make sure you have an extra one on hand to do that. I used the entire cucumber for the drink, so I garnished with lemon slices.)
THANK YOU!!! It was soooooo good...so refreshing and light and (duh) cucumbery! I really wanted a 2nd one, but didn't want to pay another $4.00...I'm going to buy a cucumber tomorrow so I can try this!
